Ingredients
- 25 g Parsley
- 100 g Sambar Onion Peeled
- 250 g Organically Grown Green Capsicum
- 2.5 Kg Austin Whole Peeled Tomato
- 525 g Veeba Herby Tomato Pizza & Pasta Sauce
- 500 g Carrot
- 1 kg Tata Salt (Vacuum Evaporated Iodised)
- 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
- 100 g Mdh Red Chilli Powder
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a large mixing bowl, combine 1/4 cup chopped parsley, 1/4 cup finely chopped onion, 1/4 cup diced green pepper, 1 diced tomato, 3/4 can of tomato sauce, 1 tsp salt, 1 tsp black pepper, and 1/2 tsp red pepper. Mix well until evenly combined.
- 3. Spread the vegetable mixture evenly in a 9 x 13-inch baking pan.
- 4. Slice 2 carrots and 1 green pepper into thin rounds. Arrange the vegetable slices over the mixture in an even layer.
- 5. Thin the remaining tomato sauce with a small amount of water and pour it evenly over the vegetables. Sprinkle with additional salt and black pepper, if desired.
- 6. Cover the baking pan with aluminum foil and bake in the preheated oven for 30 minutes or until the vegetables are tender.
- 7. Remove from the oven and let it rest for a few minutes before serving. Serve hot with a side of rice.
