Parsley and Tomato Vegetable Bake recipe

Ingredients

  • 25 g Parsley
  • 100 g Sambar Onion Peeled
  • 250 g Organically Grown Green Capsicum
  • 2.5 Kg Austin Whole Peeled Tomato
  • 525 g Veeba Herby Tomato Pizza & Pasta Sauce
  • 500 g Carrot
  • 1 kg Tata Salt (Vacuum Evaporated Iodised)
  • 1 pack (100 g) Tata Sampann Pure Black Pepper Powder
  • 100 g Mdh Red Chilli Powder

Instructions

  1. 1. Preheat your oven to 375°F (190°C).
  2. 2. In a large mixing bowl, combine 1/4 cup chopped parsley, 1/4 cup finely chopped onion, 1/4 cup diced green pepper, 1 diced tomato, 3/4 can of tomato sauce, 1 tsp salt, 1 tsp black pepper, and 1/2 tsp red pepper. Mix well until evenly combined.
  3. 3. Spread the vegetable mixture evenly in a 9 x 13-inch baking pan.
  4. 4. Slice 2 carrots and 1 green pepper into thin rounds. Arrange the vegetable slices over the mixture in an even layer.
  5. 5. Thin the remaining tomato sauce with a small amount of water and pour it evenly over the vegetables. Sprinkle with additional salt and black pepper, if desired.
  6. 6. Cover the baking pan with aluminum foil and bake in the preheated oven for 30 minutes or until the vegetables are tender.
  7. 7. Remove from the oven and let it rest for a few minutes before serving. Serve hot with a side of rice.
