Ingredients

  • medium Chilli Green Long
  • 500 g Capsicum Green
  • 1 bunch Spring Onion
  • 200 g Paneer
  • 200 g Table Salt
  • 25 g Ginger Garlic Paste
  • 50 g White Pepper Powder
  • 100 g Cornflour
  • 500 g Sugar
  • - Red Chilli Powder
  • 500 Ml Champion Oil
  • 90 g Dark Soy Sauce

Instructions

  1. 1. In a mixing bowl, combine paneer cubes, salt, white pepper powder, and corn starch powder. Mix well to coat the paneer evenly. Set aside for 5-10 minutes to allow the coating to adhere.
  2. 2. Heat oil in a pan over medium heat. Shallow fry the paneer cubes until golden brown on all sides. Remove the paneer and set it aside on a plate lined with paper towels to drain excess oil.
  3. 3. In a separate pan, heat oil over high heat. Add garlic paste, ginger garlic paste, slit green chillies, and the white bulbs of spring onions. Sauté for 3-4 minutes until fragrant and lightly browned.
  4. 4. Add diced capsicum, spring onion greens, and sugar to the pan. Stir-fry for 1-2 minutes to maintain the crunch of the vegetables.
  5. 5. Add soy sauce and red chilli powder to the pan. Mix well and sauté for another 2 minutes to combine the flavors.
  6. 6. In a small bowl, mix cornflour with water to create a slurry. Pour the slurry into the pan and stir continuously. Cook for 2-3 minutes until the sauce thickens to a glossy consistency. Adjust salt and pepper to taste.
  7. 7. Add the fried paneer cubes to the pan. Gently toss to coat the paneer evenly with the sauce.
  8. 8. Finish by garnishing with freshly chopped spring onion greens. Remove from heat and serve immediately as a party appetizer with schezwan sauce on the side.
