- 500 g Tomato - Hybrid
- 100 g Jeera
- 20 g Turmeric Powder
- 50g Everest Garam Masala
- 250 g Spinach
- 200 ml Ghee
- 250 ml Lemon Juice Concentrate
- 500 g Chana Dal
- 100 g Salt
- 50 g Asafoetida Powder
- 100 g Coriander Leaves
- 100 g Red Chili Powder

Instructions
- 1. Rinse the chana dal thoroughly and soak it in water for 30 minutes. Drain and set aside.
- 2. Heat ghee in a large pan over medium heat. Add cumin seeds and asafoetida (hing), allowing them to sizzle for 30 seconds.
- 3. Add the chopped green chili and tomato, and sauté for 3-4 minutes until the tomato softens and breaks down.
- 4. Stir in turmeric powder, red chili powder, and coriander powder, and mix well. Add the soaked chana dal and sauté for 2 minutes to coat the dal with spices.
- 5. Add enough water to the pan to cover the dal, bring it to a boil, then reduce the heat to low. Cover and simmer for 25-30 minutes, stirring occasionally, until the dal is tender but not mushy.
- 6. Once the dal is cooked, add the chopped spinach to the pan, and stir well. Cook for another 5-7 minutes until the spinach is wilted and fully incorporated.
- 7. Sprinkle garam masala and salt into the curry, mix well, and let it simmer for 2 minutes to blend the flavors.
- 8. Turn off the heat, and stir in lemon juice for a tangy touch. Garnish with freshly chopped coriander leaves.
- 9. Serve hot with steamed rice or whole wheat roti for a wholesome, family-friendly meal.
