Ingredients
- - Tata Sampann 100% Pure Premium Cashews Whole Premium Quality Kaju Rich In Protein, Magnesium, And Phosphorus
- 1 l Homogenised Toned Milk
- 100g Good Life Yellow Kishmish 100 G
- 100 Ml Govind Ghee
- - Green Cardamom Powder
- 500 g Sugar
- 1 kg Basmati Rice
Instructions
- 1. Rinse 1/4 cup of rice ada (rice flakes) in water and soak for 30 minutes. Drain and set aside.
- 2. In a heavy-bottomed pot, bring 1 liter of full-fat milk to a boil. Reduce heat to low and simmer, stirring continuously to prevent scorching, until the milk thickens slightly, about 15 minutes.
- 3. Add the soaked and drained rice ada to the milk. Cook on low heat, stirring occasionally, until the ada is soft and cooked, about 20 minutes.
- 4. Stir in 1/4 cup of sugar and continue to cook on low heat until the sugar dissolves completely and the mixture thickens further, about 10 minutes.
- 5. Add 1/8 tsp of cardamom powder and mix well. Turn off the heat and let the payasam cool slightly.
- 6. In a small pan, heat 1 tbsp of ghee. Fry 2 tbsp of broken cashews and 1 tbsp of raisins until golden brown. Add the fried cashews and raisins to the payasam as garnish.
- 7. Serve warm or chilled as desired.
