Instructions

  1. 1. Heat mustard oil in a deep pan over medium heat until it starts to smoke slightly, then lower the heat to prevent burning.
  2. 2. Add curry leaves and green chilies to the oil and sauté for 1-2 minutes until fragrant.
  3. 3. Add the chopped tomatoes to the pan, and cook for 5-7 minutes until they soften and release their juices.
  4. 4. Stir in the turmeric powder, red chili powder, cumin powder, and coriander powder, and cook for 2-3 minutes to toast the spices.
  5. 5. Add the mutton pieces to the pan, and mix well to coat them evenly with the spice mixture. Cook for 8-10 minutes, stirring occasionally, until the mutton begins to brown slightly.
  6. 6. Reduce the heat to low, cover the pan, and let the mutton cook for 30-40 minutes, stirring occasionally, until tender and fully cooked. Add a splash of water if needed to prevent sticking.
  7. 7. Once the mutton is fully cooked, sprinkle garam masala and stir well to combine. Adjust salt to taste.
