- 500 g Onion
- 1 pack Mushrooms Button
- 500 g Tomato - Hybrid
- 100 g Pasteurised Butter
- 250 ml Fresh Cream
- 20 g Oregano
- 1 l Refined Soyabean Oil
- 200 g Table Salt
- 100 g Black Pepper Powder
- - Red Chilli Powder
Instructions
- 1. Gather all ingredients: 200g pasta (penne or spaghetti), 200g mushrooms (button or cremini), 1 medium onion (finely chopped), 2 cloves garlic (minced), 1 medium tomato (finely chopped), 1/2 cup fresh cream, 1 tbsp butter, 1 tbsp olive oil, 1/2 tsp red chili powder, 1/2 tsp turmeric powder, 1 tsp dried oregano, 1 tsp dried basil, salt to taste, freshly ground black pepper, and fresh coriander leaves (chopped) for garnish.
- 2. Bring a large pot of water to a boil. Add a pinch of salt and 1 tsp olive oil. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
- 3. While the pasta is cooking, clean the mushrooms with a damp cloth and slice them thinly.
- 4. Heat 1 tbsp olive oil and 1 tbsp butter in a large pan over medium heat. Add the chopped onions and sauté until they turn translucent.
- 5. Add the minced garlic and sauté for another 30 seconds until fragrant.
- 6. Add the chopped tomatoes and cook until they soften and release their juices, about 3-4 minutes.
- 7. Add the sliced mushrooms to the pan. Cook for 5-6 minutes, stirring occasionally, until the mushrooms are tender and release their moisture.
- 8. Season the mushroom mixture with red chili powder, turmeric powder, dried oregano, dried basil, salt, and freshly ground black pepper. Mix well to combine.
- 9. Pour in the fresh cream and stir until the mixture is well combined and heated through. Let it simmer for 2-3 minutes on low heat.
- 10. Add the cooked pasta to the pan and toss gently to coat the pasta evenly with the mushroom sauce.
- 11. Taste and adjust seasoning if needed. If the sauce is too thick, add a splash of pasta cooking water or milk to loosen it.
- 12. Garnish with freshly chopped coriander leaves and serve hot.
