Ingredients

  • 1 l Homogenised Toned Milk
  • 500 g Curd
  • 500G Madhur Sugar

Instructions

  1. 1. Heat the milk in a heavy-bottomed pan over medium heat, stirring occasionally to prevent scorching. Once it begins to boil, reduce the heat and simmer for 7-8 minutes. Remove from heat and set aside.
  2. 2. In a separate heavy-bottomed saucepan, add the remaining sugar and heat over medium-high heat, stirring continuously until it melts and turns golden brown to form caramel. Be careful not to let it burn.
  3. 3. Carefully add a small amount of water (about 2-3 tablespoons) to the caramelized sugar, stirring constantly to dissolve it completely. Bring the mixture to a boil and then remove from heat.
  4. 4. Gradually add the caramel mixture to the boiled milk, stirring well to combine. Return the milk to low heat and simmer for an additional 5-7 minutes, stirring occasionally. Remove from heat and allow the mixture to cool until it is warm (around 40°C or lukewarm to the touch).
  5. 5. Once the milk mixture has cooled to the appropriate temperature, add the curd (as a starter culture) and stir gently to combine. Ensure the milk is not too hot, as high temperatures can kill the live cultures in the curd.
  6. 6. Pour the mixture into individual cups or a single vessel. Cover with lids or a cloth to protect it.
  7. 7. Place the covered container(s) in a warm, dark, and dry place (e.g., a kitchen cupboard) and allow the mixture to ferment for 6-8 hours or until set.
  8. 8. Once set, refrigerate the Mishti Doi for at least 1-2 hours before serving. Enjoy chilled!
