- - Chilli Green Big
- 100 g Ajwain
- 100 g Badishep Big Premium
- - Besan
- 50 g Cumin Powder
- 20 g Turmeric Powder
- - Red Chilli Powder
- 100 g Cooking Soda
- 100 g Salt
- 1 liter Sunflower Oil
- 50 g Amchur (Dry Mango Powder)
Instructions
- 1. Wash and pat dry the green chilies. Make a slit lengthwise on each chili, ensuring you don’t cut them completely in half.
- 2. Prepare the stuffing by mixing roasted cumin powder, amchur (dry mango powder), salt, and crushed fennel seeds in a bowl. Stuff this mixture into the slit chilies carefully.
- 3. In a separate bowl, prepare the batter by combining gram flour, turmeric powder, red chili powder, carom seeds, baking soda, and salt. Add water gradually and whisk until you achieve a smooth, thick consistency.
- 4. Heat oil in a deep frying pan on medium heat.
- 5. Dip each stuffed chili into the batter, ensuring it is coated evenly, and gently drop it into the hot oil. Fry in batches to avoid overcrowding.
- 6. Fry the chilies for 4-5 minutes, turning occasionally, until they are golden and crispy. Remove using a slotted spoon and place on a paper towel to drain excess oil.
