Ingredients

  • 500 g Rava
  • 50 g Sesame Seeds White
  • 500 g Wheat Flour / Maida
  • 500 g Sugar
  • Loose Cardamom

Instructions

  1. 1. In a mixing bowl, combine 500g of Samrat refined MP wheat flour, 500g of roasted Double Horse Rava, and 50g of white sesame seeds.
  2. 2. Add 2-3 tablespoons of Govind Cow Ghee to the dry ingredients and mix until the mixture resembles crumbs.
  3. 3. Gradually add water to the mixture and knead to form a smooth, firm dough. Cover and let it rest for at least 15-20 minutes.
  4. 4. In a separate bowl, dissolve 500g of Madhur refined sugar in a little water to make a sugar syrup. Add a pinch of Katdare green cardamom powder for flavor.
  5. 5. Roll the dough into small circles (about 3 inches in diameter) and prick with a fork to prevent puffing during frying.
  6. 6. Heat Sunny Soya Fit refined soybean oil in a deep pan over medium heat. Ensure the oil is hot, then carefully slide the mathris into the oil.
  7. 7. Deep fry the mathris in batches until they turn golden brown and crispy. Remove them using a slotted spoon and place them on paper towels to drain excess oil.
  8. 8. While the mathris are still warm, brush them with the sugar syrup to lightly coat them, allowing the sweetness to soak in.
  9. 9. Let the Meethi Mathris cool completely before serving or storing them in an airtight container to maintain their crispness.
