Ingredients
- 500 g X 2 Organically Grown Potato Combo
- 100 g Sambar Onion Peeled
- 125 g Red Bell Pepper
- 100 g Garlic - Single Clove
- 500 ml Bertolli Extra Virgin Olive Oil
- 200 g Maggi Hot & Sweet Chilli Tomato Sauce
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
Instructions
- 1. Rinse the cod fillets thoroughly under cold water to remove any impurities.
- 2. Bring a pot of water to a boil, add the cod fillets, and simmer for 5-7 minutes until tender. Drain and set aside.
- 3. Peel and dice the potatoes into bite-sized pieces. Boil them in a separate pot of salted water for 10-12 minutes until just tender but still firm. Drain and let cool.
- 4. Heat 2 tablespoons of olive oil in a large frying pan over medium heat. Add the minced garlic and diced onion, and sauté for 3-4 minutes until fragrant and softened.
- 5. Add the diced red pepper to the pan and cook for another 5 minutes, stirring occasionally.
- 6. Pour in the tomato sauce and stir well. Let the mixture simmer for 5 minutes to allow the flavors to meld.
- 7. Gently fold in the cooked cod fillets and boiled potatoes. Cook for an additional 3-4 minutes, stirring carefully to avoid breaking the cod.
- 8. Adjust seasoning with salt and pepper to taste. Serve hot as a satisfying dinner.
