- 100 g Curry Leaves
- 500 g Tomato - Hybrid
- - Grated Coconut
- 1kg Swad Adatt Plus Matta Rice With 50% Bran, 1 Kg Pouch
- Pcs Everest Fish Curry Masala 50gm
- 1 Kg Boma Fish Fish
- 1 l Refined Soyabean Oil
- 200 g Table Salt
- 100 g Coriander Powder
- 20 g Turmeric Powder
- - Red Chilli Powder
Instructions
- 1. Rinse 1 cup of matta rice thoroughly under running water. Soak the rice in water for 30 minutes.
- 2. In a large pot, add 3 cups of water and the soaked matta rice. Bring it to a boil, then reduce the heat to low, cover, and cook for 40-45 minutes until the rice is tender. Drain excess water and set aside.
- 3. For the fish curry, clean and cut 300g of fish (such as mackerel or kingfish) into medium-sized pieces. Rinse thoroughly and set aside.
- 4. In a blender, grind 1 cup of grated coconut, 1 tsp turmeric powder, 1 tbsp red chili powder, and 1 tsp coriander powder with 1/2 cup of water into a smooth paste.
- 5. Heat 2 tbsp of coconut oil in a pan. Add 1 tsp mustard seeds, and let them splutter. Add 2 dried red chilies and 10-12 curry leaves. Sauté for 30 seconds.
- 6. Add 2 medium tomatoes, finely chopped, and cook until they turn soft and mushy.
- 7. Pour the ground coconut paste into the pan. Add 2 cups of water and mix well. Bring it to a gentle boil.
- 8. Add the fish pieces to the curry. Season with salt to taste. Cover and cook on low heat for 10-12 minutes until the fish is cooked through.
- 9. Turn off the heat and let the curry rest for 5 minutes. Serve the matta rice with the fish curry, garnished with fresh curry leaves.
