  • 1 l Refined Soyabean Oil
  • 200 g Table Salt
  • 100 g Coriander Powder
  • 20 g Turmeric Powder
  • - Red Chilli Powder

Instructions

  1. 1. Rinse 1 cup of matta rice thoroughly under running water. Soak the rice in water for 30 minutes.
  2. 2. In a large pot, add 3 cups of water and the soaked matta rice. Bring it to a boil, then reduce the heat to low, cover, and cook for 40-45 minutes until the rice is tender. Drain excess water and set aside.
  3. 3. For the fish curry, clean and cut 300g of fish (such as mackerel or kingfish) into medium-sized pieces. Rinse thoroughly and set aside.
  4. 4. In a blender, grind 1 cup of grated coconut, 1 tsp turmeric powder, 1 tbsp red chili powder, and 1 tsp coriander powder with 1/2 cup of water into a smooth paste.
  5. 5. Heat 2 tbsp of coconut oil in a pan. Add 1 tsp mustard seeds, and let them splutter. Add 2 dried red chilies and 10-12 curry leaves. Sauté for 30 seconds.
  6. 6. Add 2 medium tomatoes, finely chopped, and cook until they turn soft and mushy.
  7. 7. Pour the ground coconut paste into the pan. Add 2 cups of water and mix well. Bring it to a gentle boil.
  8. 8. Add the fish pieces to the curry. Season with salt to taste. Cover and cook on low heat for 10-12 minutes until the fish is cooked through.
  9. 9. Turn off the heat and let the curry rest for 5 minutes. Serve the matta rice with the fish curry, garnished with fresh curry leaves.
