- 500 g Capsicum Green
- 250 ml Lemon Juice Concentrate
- 200 ml Mustard Oil
- 100 g Salt
- 50 g Asafoetida Powder
- - Coriander Powder
- 100 g Jeera
- 100 g Red Chili Powder
- 20 g Turmeric Powder
- 500 ml Water
Instructions
- 1. Rinse the masoor dal thoroughly in cold water until the water runs clear. Set aside.
- 2. Heat the oil in a large pot over medium heat. Add cumin seeds and let them splutter for about 30 seconds. Add asafoetida and stir for a few seconds.
- 3. Add the chopped tomato, green bell pepper, cabbage, and green beans to the pot. Sauté the vegetables for 5-7 minutes until they soften slightly.
- 4. Stir in turmeric powder, ground coriander, red chili powder, and salt. Mix well to coat the vegetables with the spices.
- 5. Add the rinsed masoor dal to the pot and mix everything together. Pour in enough water to cover the ingredients by about two inches, then bring to a boil.
- 6. Reduce the heat to low, cover the pot, and let the soup simmer for 25-30 minutes, stirring occasionally, until the lentils are soft and the vegetables are fully cooked.
- 7. Once the soup has reached the desired consistency, turn off the heat. Stir in the fresh cilantro and lemon juice for a burst of freshness.
- 8. Serve the soup hot in bowls, garnished with additional cilantro if desired. Pair with warm flatbreads or steamed rice for a complete meal.
