Ingredients
- 500 g Rava
- - Rice Flour
- 500 g Refined Flour
- 200 g Dahi
- 250 g Carrot
- 250 ml Olive Oil
- 1 pc (approx. 500 g to 800 g) Cabbage
- 500 g Capsicum Green
- 50 g Asafoetida Powder
- 100 g Coriander Leaves
- 50G Green Chilies
- 100 g Jeera
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. In a large bowl, mix semolina, rice flour, all-purpose flour, and yogurt. Add water gradually to create a thin batter, stirring to avoid lumps. Set aside for 20 minutes.
- 2. Heat 1 tbsp oil in a pan. Add mustard seeds and let them splutter. Stir in cumin seeds, asafoetida, green chilies, turmeric powder, and sauté briefly.
- 3. Add cabbage, carrot, and bell peppers to the pan. Cook for 4-5 minutes until vegetables soften slightly but retain crunch. Season with salt and mix in coriander leaves. Turn off the heat and let the filling cool.
- 4. Heat a non-stick skillet on medium heat. Pour a ladleful of dosa batter onto the pan and spread thinly in circular motions to form a crepe. Drizzle a few drops of oil around the edges.
- 5. Cook the dosa for 2-3 minutes until crispy and golden. Place a portion of the vegetable filling in the center, fold the dosa, and transfer to a plate.
- 6. Repeat with the remaining batter and filling. Serve hot with coconut chutney or sambar.
