Ingredients
- 500 g Suji
- 200 g Dahi
- 250 g Carrot
- 100 g Coriander Leaves
- 1 box Baking Soda
- 250 ml Olive Oil
- 1 pc (approx. 500 g to 800 g) Cabbage
- 500 g Capsicum Green
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. In a mixing bowl, combine semolina, yogurt, and water to form a smooth batter. Let it rest for 15 minutes to allow the semolina to absorb moisture.
- 2. Add diced capsicum, grated carrot, chopped cabbage, and coriander to the batter. Mix well to ensure even distribution of vegetables.
- 3. Heat a small amount of oil in an appe pan and add cumin seeds. Once they crackle, pour the spice mixture (turmeric powder, red chili powder, garam masala) into the pan and sauté lightly.
- 4. Add the sautéed spices to the vegetable batter and mix. Stir in baking soda and salt just before cooking to maintain fluffiness.
- 5. Preheat the appe pan on medium heat and grease each cavity with a drop of oil. Pour small portions of batter into each cavity until filled but not overflowing.
- 6. Cover and cook the appe for 3-4 minutes on medium heat. Flip them using a skewer or fork and cook the other side for another 2-3 minutes until golden brown.
- 7. Remove cooked appe from the pan and serve hot with mint chutney or plain yogurt.
