- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid

Instructions
- 1. Drain soaked green gram and blend it into a smooth batter with a pinch of salt and rice flour. Adjust consistency so it's slightly thicker than pancake batter.
- 2. Heat 1 tbsp ghee or oil in a pan, add cumin seeds, grated ginger, and green chilies, and sauté for 1-2 minutes until aromatic.
- 3. Add chopped onions and tomatoes to the pan and cook until softened, about 5 minutes. Stir in turmeric, garam masala, red chili powder, and salt.
- 4. Add crumbled paneer to the mixture and cook for 2-3 minutes, ensuring the paneer is well-coated with spices. Finish with chopped coriander and a splash of lemon juice. Set aside.
- 5. Heat a non-stick skillet and pour a ladleful of the green gram batter, spreading it evenly to form a thin dosa. Cook on medium heat until the edges turn golden and crisp.
- 6. Place a generous spoonful of the paneer masala filling in the center of the dosa, fold it, and cook for 1 minute to seal.
- 7. Repeat the process with the remaining batter and filling. Serve hot with chutney or yogurt.
