Ingredients

  • 1 kg Yellow Moong Dal
  • 1 kg Rice
  • 200 g Paneer
  • 500 g Onion
  • 200 g Dahi
  • 200 ml Mustard Oil
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder

Instructions

  1. 1. Soak the moong dal and rice in water for 4-6 hours, then drain and blend with yogurt into a smooth batter. Let it ferment for 6-8 hours or overnight.
  2. 2. Heat 1/2 tbsp oil in a pan, add cumin seeds, and let them splutter. Add onions, green chili, and sauté until translucent.
  3. 3. Add the crumbled paneer, turmeric powder, red chili powder, garam masala, and salt. Cook for 3-4 minutes until the mixture is well combined. Stir in chopped tomatoes and cook for another 2 minutes. Remove from heat and let it cool slightly.
  4. 4. Mix salt into the fermented batter. Heat a non-stick pan, grease lightly, and pour a ladle of batter. Spread it slightly to form a thick pancake.
  5. 5. Spread a portion of the paneer mixture on top of the uttapam and press gently. Cook on medium heat for 2-3 minutes, then flip carefully and cook the other side for 2-3 minutes until golden brown.
  6. 6. Repeat with the remaining batter and paneer mixture to make more uttapams. Garnish with fresh coriander leaves.
  7. 7. Serve hot with coconut chutney or mint yogurt dip for a complete breakfast.
