Ingredients

  • 100 g Oats Jumbo
  • 500 g Suji
  • 200 g Dahi
  • 500 g Tomato - Hybrid
  • 500 g Onion
  • 100G Oleo
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Grind the rolled oats into a fine powder using a blender or food processor, then mix with semolina in a large bowl.
  2. 2. Add yogurt and enough water to the oats and semolina mixture to create a thick batter. Let it rest for 15 minutes.
  3. 3. Heat oil in a pan and add mustard seeds, cumin seeds, and curry leaves. Allow them to sizzle for 30 seconds.
  4. 4. Stir in the chopped onion, tomato, and green chili, and sauté for 2-3 minutes until softened. Add turmeric powder, red chili powder, and salt, mixing well.
  5. 5. Fold the sautéed vegetable mixture into the batter, along with fresh coriander leaves. Adjust consistency if needed with water.
  6. 6. Heat a non-stick pan or griddle over medium heat and lightly grease it with oil. Pour a ladle of batter onto the pan and spread it into a small circular shape.
  7. 7. Cook the uttapam for 2-3 minutes on one side until the edges turn crispy and golden, then flip and cook the other side for 2 minutes.
  8. 8. Repeat the process with the remaining batter. Serve hot with coconut chutney or sambar for a complete meal.
