- 100 g Quinoa
- 400G Chtoura Foods Boiled Chickpeas In Brine
- 500 g Onion
- 250 ml Olive Oil
- 100 g Coriander Leaves
- 200 g Dahi
- 500 g Capsicum Green
- medium Chilli Green Long
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
Instructions
- 1. Rinse the quinoa under running water, then cook it in a pot according to package instructions until fluffy. Set aside.
- 2. Heat olive oil in a skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds.
- 3. Add the chopped onion and sauté until golden brown. Stir in the tomato and cook until softened.
- 4. Mix in turmeric powder, coriander powder, garam masala, and red chili powder. Cook for 1 minute to release the aromas.
- 5. Add the cooked chickpeas and diced bell pepper to the skillet. Stir well to coat the chickpeas with the masala. Cook for 5-7 minutes, stirring occasionally.
- 6. Adjust salt to taste and mix in the chopped cilantro and green chili for a fresh kick.
- 7. To assemble, place the cooked quinoa in a bowl. Top with the chickpea masala mixture and a dollop of yogurt.
