- 1 kg Mangoes
- 200 g Dahi
- 500 g Sugar
- 35g Delight Nuts Pistachios Roasted Salted 35g
- 0.25 g Saffron
- 20 g Cardamom Powder
Instructions
- 1. Begin by making the rabri. Heat full-fat milk in a heavy-bottomed pan over medium heat. Stir continuously to avoid burning and bring it to a boil.
- 2. Reduce the heat to low and let the milk simmer. As a layer of cream forms on the surface, gently push it to the sides of the pan. Repeat this process until the milk reduces to about one-third of its original quantity.
- 3. Add sugar, cardamom powder, and crushed pistachios to the reduced milk. Stir well and cook briefly for 2 minutes. Remove from heat and let the rabri cool completely.
- 4. Peel and chop the ripe mangoes, then blend them into a smooth puree. In a separate bowl, whisk the yogurt until creamy and smooth.
- 5. Combine the mango puree, yogurt, milk, and sugar in a blender. Blend until completely smooth and creamy. Adjust sweetness to taste.
- 6. Pour the mango lassi into serving glasses. Using a spoon, swirl the cooled rabri into the lassi, creating a marbled effect. Garnish with chopped pistachios and saffron strands.
