Ingredients

  • 1Bunch Pudina
  • 100 g Coriander Leaves
  • 250 g Mutton
  • 250G Veeba Tandoori Mayonnaise (250g)
  • 200G Adrak Lasun Paste (200g)
  • 500 g Onion
  • medium Chilli Green Long
  • 50g Everest Garam Masala
  • 50 g Cumin Powder
  • - Coriander Powder
  • - Red Chilli Powder
  • 20 g Turmeric Powder
  • 100 g Salt
  • 250 ml Lemon Juice Concentrate
  • 200 ml Mustard Oil
  • 500 g Tomato - Hybrid
  • 200 g Dahi

Instructions

  1. 1. In a large mixing bowl, combine minced mutton, ginger-garlic paste, finely chopped onions, green chilies, garam masala, cumin powder, coriander powder, red chili powder, turmeric powder, chopped coriander leaves, salt, and lemon juice. Mix thoroughly.
  2. 2. Divide the mutton mixture into equal portions and shape each portion around a skewer to form long cylindrical kebabs. Ensure the kebabs are evenly shaped for uniform cooking.
  3. 3. Heat a grill pan or tawa over medium heat and brush it with a little oil. Cook the kebabs on all sides until golden brown and fully cooked, about 8-10 minutes, turning occasionally.
  4. 4. Prepare the green chutney by blending coriander leaves, mint leaves, green chilies, garlic, yogurt, salt, and lemon juice into a smooth paste. Set aside.
  5. 5. Warm the parathas on a tawa for 1-2 minutes on each side until soft and pliable. Do not overcook to keep them soft for rolling.
  6. 6. Assemble the rolls by spreading a layer of green chutney on each paratha. Place a cooked mutton seekh kebab in the center, add sliced onions, tomatoes, and a drizzle of yogurt or mayonnaise. Roll tightly.
  7. 7. Wrap the rolls in parchment paper or foil for easy handling. Serve hot with additional chutney or a side salad.
