- 100 g Coriander Leaves
- 500 g Tomato - Hybrid
- 250 g French Beans
- 1 pc (approx. 500 g to 800 g) Cabbage
- 100G Oleo
- 250 ml Lemon Juice Concentrate
- 1 kg Yellow Moong Dal
- 500 g Onion
- 100 g Garlic
- 50 g Asafoetida Powder
- 50 g Black Pepper Powder
- - Coriander Powder
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Rinse the yellow lentils thoroughly under cold water until the water runs clear. Soak the lentils in water for 20 minutes, then drain.
- 2. Heat vegetable oil in a large pot over medium heat. Add the cumin seeds and asafoetida, and sauté until aromatic, about 30 seconds.
- 3. Add the chopped tomato, turmeric powder, red chili powder, coriander powder, and salt. Cook for 3-4 minutes, stirring occasionally, until the tomato softens and the spices are fragrant.
- 4. Add the soaked lentils to the pot along with 4 cups of water. Bring to a boil, then reduce the heat to low and simmer for 15 minutes, stirring occasionally.
- 5. Stir in the green beans and cabbage. Continue to simmer for another 10-12 minutes, or until the lentils are tender and the vegetables are cooked through.
- 6. Adjust the consistency of the soup by adding more water if needed, and season with black pepper and additional salt to taste.
- 7. Turn off the heat and stir in fresh lemon juice and chopped coriander leaves. Mix well.
- 8. Serve the Lentil & Vegetable Harira Soup hot, garnished with extra coriander leaves if desired. Enjoy with warm flatbread or steamed rice.
