- 500 G Brown Rice
- 250 G Masur Dal
- 250 g Spinach
- 500 g Tomato - Hybrid
- 100 g Hing Khoda
- 200 ml Mustard Oil
- medium Chilli Green Long
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Rinse the brown rice thoroughly and cook it in a pot or rice cooker until tender. Set aside once done.
- 2. Rinse the red lentils well and cook them in a saucepan with enough water until soft and mushy. Stir occasionally to prevent sticking.
- 3. Heat oil in a pan over medium heat. Add cumin seeds and let them splutter, then add hing and green chilies. Stir for a few seconds.
- 4. Add the chopped tomatoes to the pan and cook until they turn soft and oil starts to separate.
- 5. Mix in turmeric powder, coriander powder, red chili powder, and salt. Cook the spices with the tomatoes for 2-3 minutes.
- 6. Add the cooked lentils to the pan and mix well. If the curry is too thick, add a little water to adjust the consistency.
- 7. Stir in the chopped spinach and cook for 2-3 minutes until the spinach wilts and blends into the curry.
- 8. Add garam masala and simmer the curry for another 2 minutes. Adjust seasoning if needed.
- 9. Serve the lentil spinach curry hot, garnished with fresh coriander leaves, alongside the cooked brown rice.
