Ingredients

  • 100 g Jeera
  • 200 ml Mustard Oil
  • 100 g Red Chili Powder
  • 50 g Asafoetida Powder
  • 500 g Tomato - Hybrid
  • 1 piece Bottle Gourd
  • 20 g Turmeric Powder
  • 100 g Salt
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala

Instructions

  1. 1. Peel and dice the bottle gourd (lauki) into small cubes. Finely chop the tomatoes and slit the green chilies.
  2. 2. Heat oil in a deep pan or kadhai over medium flame. Add cumin seeds and let them splutter. Add asafoetida and green chilies, stirring for a few seconds.
  3. 3. Add the chopped tomatoes to the pan and cook until they soften and release oil, about 5-7 minutes. Stir occasionally to prevent sticking.
  4. 4. Add turmeric powder, coriander powder, and red chili powder. Mix well, allowing the spices to blend with the tomatoes.
  5. 5. Add the diced lauki to the pan. Stir to coat the lauki with the spice mixture. Add salt to taste.
  6. 6. Cover the pan with a lid and let the lauki cook on low to medium heat for 15-20 minutes, stirring occasionally. The lauki will release its own water and become tender.
  7. 7. Once the lauki is cooked, sprinkle garam masala over the curry and mix well. Cook for another 2-3 minutes to let the flavors meld.
  8. 8. Turn off the heat and garnish with freshly chopped coriander leaves. Serve hot with chapati, paratha, or steamed rice.
