Ingredients

  • 250 g Lady Finger (Bhindi)
  • 2.5 Kg Austin Whole Peeled Tomato
  • 200 g Sweet Corn Peeled
  • 1 ltr Bertolli Extra Virgin Olive Oil
  • 50 g On1Y Black Peppercorns With Grinder
  • 200 g Hommade Tomato Puree
  • 250 g Beans Broad
  • 100 g Pasteurised Butter
  • 1 kg Simply Staples Mineral Rich Sea Salt
  • 50 g Black Pepper

Instructions

  1. 1. Wash and prepare all vegetables. Slice 1 cup of fresh okra into small pieces, dice 2 fresh tomatoes, and set aside 1 cup of sweet corn kernels and 1 cup of butter beans.
  2. 2. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced tomatoes and cook for 5 minutes until softened.
  3. 3. Add the sliced okra, sweet corn, and butter beans to the pot. Stir well to combine and cook for another 5 minutes.
  4. 4. Pour in 1 cup of tomato puree and stir. Reduce the heat to low, cover the pot, and let the stew simmer for 20 minutes, stirring occasionally.
  5. 5. Taste and adjust seasoning with 1 teaspoon of sea salt and 1/2 teaspoon of black pepper. Serve hot as a comforting dinner option.
