Ingredients
- 250 g Lady Finger (Bhindi)
- 2.5 Kg Austin Whole Peeled Tomato
- 200 g Sweet Corn Peeled
- 1 ltr Bertolli Extra Virgin Olive Oil
- 50 g On1Y Black Peppercorns With Grinder
- 200 g Hommade Tomato Puree
- 250 g Beans Broad
- 100 g Pasteurised Butter
- 1 kg Simply Staples Mineral Rich Sea Salt
- 50 g Black Pepper
Instructions
- 1. Wash and prepare all vegetables. Slice 1 cup of fresh okra into small pieces, dice 2 fresh tomatoes, and set aside 1 cup of sweet corn kernels and 1 cup of butter beans.
- 2. Heat 2 tablespoons of olive oil in a large pot over medium heat. Add the diced tomatoes and cook for 5 minutes until softened.
- 3. Add the sliced okra, sweet corn, and butter beans to the pot. Stir well to combine and cook for another 5 minutes.
- 4. Pour in 1 cup of tomato puree and stir. Reduce the heat to low, cover the pot, and let the stew simmer for 20 minutes, stirring occasionally.
- 5. Taste and adjust seasoning with 1 teaspoon of sea salt and 1/2 teaspoon of black pepper. Serve hot as a comforting dinner option.
