Ingredients
- 250 g Spring Onion
- 100 g Baby Spinach
- 100 g Sambar Onion Peeled
- 400 g Pastazara Peeled Tomatoes In Tomato Juice
- 200 g Orange Carrot (Gajar)
- 100 g Mother Dairy Salted Butter
- 50 g On1Y Black Peppercorns With Grinder
- 1 kg Simply Staples Mineral Rich Sea Salt
Instructions
- 1. Melt 2 tablespoons of butter in a medium-sized saucepan over medium heat. Add 1 diced onion and cook until translucent, about 5 minutes.
- 2. Add 2 cups of diced tomatoes and 8 cups of water to the saucepan. Turn the heat to high and bring to a boil, then lower to medium-low and simmer for 15 minutes.
- 3. Add 1 sliced carrot to the pot. Simmer for another 15 minutes until the vegetables are tender.
- 4. Stir in 4 cups of spinach, 3 chopped scallions, 2 tablespoons of sea salt, and a pinch of black pepper. Heat until warmed through, about 3-5 minutes.
- 5. Turn off the heat and serve the soup hot. Adjust seasoning with additional salt and black pepper to taste.
