Ingredients
- 100 g Curly Kale Leaves
- 100 g Sambar Onion Peeled
- 200 g Orange Carrot (Gajar)
- 100 g Celery Stalk
- 100 g Garlic - Single Clove
- 2 ltr Figaro Extra Light Olive Oil
- 100 g Mother Dairy Salted Butter
- 1 Kg Kissan Tomato Paste
- 35 g On1Y Grinder Italian Seasoning Flakes
- 1 kg Akar Powder Salt
- 250 g Freshcon Cooked Kabuli Chana (Chick Peas)
- 200 g Hommade Tomato Puree
Instructions
- 1. In a large skillet, heat 1 tablespoon of olive oil and 1 tablespoon of butter over medium heat. Add 1 diced onion, 2 diced carrots, and 1 diced celery stalk. Cook until softened, about 5-7 minutes.
- 2. Stir in 2 minced garlic cloves and 1 tablespoon of tomato paste. Cook for 1-2 minutes until the garlic is fragrant.
- 3. Season the mixture with 1 teaspoon of Italian seasoning and 1/2 teaspoon of salt. Add 600 ml of tomato puree and stir well.
- 4. In a large pot, bring 8 cups of water to a simmer over medium heat. Transfer the contents of the skillet into the pot and stir to combine.
- 5. Add 1 cup of chopped kale to the pot. Bring the soup to a boil, then reduce the heat and let it simmer for 20 minutes.
- 6. Stir in 1 cup of cooked chickpeas. Continue to cook for another 5 minutes until heated through.
- 7. Serve the soup hot, garnished with additional fresh herbs if desired.
