Ingredients
- 100 g Curry Leaves
- - Grated Coconut
- 500 g Curd
- 250 g Cucumber
- 1 kg Bitter Gourd
- 200 g Table Salt
- 100 g Red Mustard Seeds
- 1 l Refined Soyabean Oil
Instructions
- 1. Wash and peel 1 medium cucumber or 1 medium bitter gourd (depending on preference). If using bitter gourd, slice thinly and soak in salted water for 15 minutes to reduce bitterness. Drain and pat dry.
- 2. Heat 2 tbsp of coconut oil in a pan. Add the sliced cucumber or bitter gourd and sauté on medium heat until softened and lightly cooked. Remove from heat and let it cool.
- 3. In a small blender, grind 1/4 cup grated coconut, 1/2 tsp mustard seeds, and 2 green chilies with 2-3 tbsp of water into a smooth paste.
- 4. Transfer the cooked cucumber or bitter gourd into a mixing bowl. Add the ground coconut paste and mix well.
- 5. Stir in 1/2 cup of plain yogurt and mix until combined. Adjust salt as needed.
- 6. Heat another 1 tbsp of coconut oil in a small pan. Add 1/2 tsp mustard seeds and let them splutter. Add 1 sprig of curry leaves and sauté briefly.
- 7. Pour the tempering over the kichadi mixture. Mix gently and serve chilled or at room temperature as a side dish.
