Ingredients

  • 1 kg Basmati Rice
  • 200 ml Cow Ghee
  • 1 l Milk
  • 100 g Cashew Jumbo W180
  • 100 g Raisins
  • 20 g Cardamom Powder
  • 500 g Sugar

Instructions

  1. 1. In a heavy-bottomed pan, heat 1 liter of full-fat milk on medium flame. Stir occasionally to prevent it from sticking to the bottom.
  2. 2. Once the milk comes to a boil, reduce the flame to low and simmer it until it reduces to about 3/4th of its original quantity. Stir frequently to avoid burning.
  3. 3. Add 1/4 cup of washed and soaked basmati rice to the milk. Continue to cook on low flame, stirring occasionally, until the rice cooks completely and the mixture thickens.
  4. 4. Stir in 1/4 cup of sugar and continue to cook for another 5-7 minutes, allowing the sugar to dissolve completely and blend with the milk.
  5. 5. Add 1/4 tsp of cardamom powder for flavor and mix well.
  6. 6. In a small pan, heat 1 tbsp of ghee. Fry 10-12 cashews and 10-12 raisins until golden and aromatic. Add these to the kheer.
  7. 7. Turn off the heat and let the kheer cool slightly before serving. Serve warm or chilled, garnished with 1 tbsp of slivered almonds and pistachios.
