Kesar Shrikhand is a luscious and creamy dessert made with hung curd, saffron strands, and aromatic cardamom, topped with a sprinkle of nuts for added texture. This traditional Gujarati and Maharashtrian delicacy is perfect for festive occasions or as a cooling treat after a hearty meal.
Ingredients
- 0.25 g Saffron
- 100 g Almonds
- Unsalted Sliced Pistachio (Unsalted) (100g)
- 100 g Icing Sugar
- - Dairy Milk
- 20 g Cardamom Powder
- 200 g Dahi
Instructions
- 1. Place a clean muslin cloth over a large bowl and pour the fresh yogurt into it. Tie the cloth securely and hang it over the sink or a bowl to drain the excess whey for 4-5 hours or until the yogurt is thickened into hung curd.
- 2. Once the curd is thickened, transfer it into a large mixing bowl and whisk it using a hand whisk or spoon until smooth and creamy.
- 3. Soak the saffron strands in 2 tablespoons of warm milk for 10 minutes to release their color and aroma.
- 4. Add powdered sugar, saffron-infused milk, and cardamom powder to the whisked curd. Mix thoroughly until the sugar dissolves completely and the mixture is evenly flavored.
- 5. Taste the shrikhand and adjust sweetness or saffron flavor if needed. Refrigerate for 30 minutes to let the flavors meld and to serve it chilled.
- 6. Before serving, garnish with chopped almonds and pistachios. Optionally, sprinkle a few saffron strands on top for decoration.
