Ingredients

  • 6 pcs White Eggs
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • medium Chilli Green Long
  • 300 g Ginger Paste
  • 25 g Ginger Garlic Paste
  • - Red Chilli Powder
  • - Coconut Oil
  • 100 g Curry Leaves
  • 100 g Coriander Leaves
  • - Coriander Powder
  • 50g Everest Garam Masala
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Boil the eggs in a pot for 10-12 minutes until hard-boiled, then peel and set aside.
  2. 2. Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter, then toss in curry leaves and sauté for 30 seconds.
  3. 3. Add sliced onions to the pan and sauté until golden brown, about 8-10 minutes. Stir in the ginger and garlic paste, cooking for another 1-2 minutes until fragrant.
  4. 4. Add the chopped tomatoes, turmeric powder, coriander powder, chili powder, and garam masala. Cook until the tomatoes are soft and the oil begins to separate, about 5-7 minutes.
  5. 5. Add the boiled eggs to the gravy and gently mix to coat them in the masala. Simmer for 5 minutes to allow the flavors to meld.
  6. 6. Adjust salt and squeeze lemon juice over the dish. Garnish with chopped cilantro if desired.
