Ingredients
- 6 pcs White Eggs
- 500 g Onion
- 500 g Tomato - Hybrid
- medium Chilli Green Long
- 300 g Ginger Paste
- 25 g Ginger Garlic Paste
- - Red Chilli Powder
- - Coconut Oil
- 100 g Curry Leaves
- 100 g Coriander Leaves
- - Coriander Powder
- 50g Everest Garam Masala
- 250 ml Lemon Juice Concentrate
- 100 g Salt
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Boil the eggs in a pot for 10-12 minutes until hard-boiled, then peel and set aside.
- 2. Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter, then toss in curry leaves and sauté for 30 seconds.
- 3. Add sliced onions to the pan and sauté until golden brown, about 8-10 minutes. Stir in the ginger and garlic paste, cooking for another 1-2 minutes until fragrant.
- 4. Add the chopped tomatoes, turmeric powder, coriander powder, chili powder, and garam masala. Cook until the tomatoes are soft and the oil begins to separate, about 5-7 minutes.
- 5. Add the boiled eggs to the gravy and gently mix to coat them in the masala. Simmer for 5 minutes to allow the flavors to meld.
- 6. Adjust salt and squeeze lemon juice over the dish. Garnish with chopped cilantro if desired.
- 7. Serve hot with warm chapatis, parathas, or steamed rice.
