Ingredients

  • 6 pcs White Eggs
  • - Switz Puff Dough Paratha
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • - Coconut Oil
  • 100 g Coriander Leaves
  • 200G Adrak Lasun Paste (200g)
  • medium Chilli Green Long
  • - Coriander Powder
  • 100 g Curry Leaves
  • 50g Everest Garam Masala
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Boil the eggs in a pot for about 8-10 minutes until hard-boiled. Once done, cool, peel, and set aside.
  2. 2. Heat coconut oil in a pan over medium heat. Add mustard seeds and let them splutter, then add curry leaves for an aromatic touch.
  3. 3. Add the sliced onions and sauté until golden brown. Stir in the ginger-garlic paste and cook for 1-2 minutes until fragrant.
  4. 4. Mix in the chopped tomatoes, turmeric powder, red chili powder, coriander powder, and salt. Cook until the tomatoes soften and the mixture thickens into a rich masala.
  5. 5. Cut the boiled eggs into halves and gently fold them into the masala. Sprinkle garam masala and let it simmer for 2-3 minutes so the flavors meld together.
  6. 6. Warm the flatbreads or chapatis on a hot skillet. Place a portion of the egg roast in the center of each flatbread, garnish with freshly chopped cilantro, and roll tightly into a wrap.
  7. 7. Serve the wraps hot, with a side of yogurt or a fresh salad if desired.
