- 40 g Chilli Flakes - Red
- 500 g Onion
- medium Chilli Green Long
- 500 g Dry White Peas
- 1 l Refined Soyabean Oil
- 200 g Table Salt
- 25 g Ginger Garlic Paste
- - Cumin Seed
- 20 g Turmeric Powder
Instructions
- 1. Soak 500g of dry white peas in water overnight or for at least 6-8 hours until they are soft.
- 2. Drain the soaked peas and then cook them in a pot with fresh water, adding a bay leaf (tejpatta) for enhanced aroma. Cook until the peas are tender.
- 3. In a large pan, heat 2 tablespoons of sunny soya fit refined soyabean oil over medium heat. Add 2-3 medium-sized onions (finely chopped) and sauté until they turn golden brown.
- 4. Incorporate Smith & Jones ginger garlic paste (25g) into the pan and cook for an additional 2 minutes, stirring occasionally.
- 5. Add 1-2 chopped green chilies and a teaspoon each of Eastern cumin seeds and Orika coriander whole. Cook for another minute to release the spices' aroma.
- 6. Add the cooked peas to the pan and mix well. Season with Keya table salt and a teaspoon each of Keya turmeric powder and Keya red chili flakes for a spicy kick.
- 7. Let the mixture simmer for 10-15 minutes, allowing the peas to soak up the flavors of the spices.
- 8. Garnish with finely chopped coriander leaves and garlic chives before serving for a fresh burst of flavor.
- 9. Serve the Kelli Chana hot, with a side of your choice, such as rice or flatbread.
