- 1 kg Potato
- 200 g Table Salt
- 190 ml White Cooking Vinegar
- 500 Ml Champion Oil
- - Mustard Paste

- 1. Begin by boiling the potatoes in salted water until they are fork-tender, about 15-20 minutes. Drain the potatoes, let them cool slightly, then peel and slice them into bite-sized pieces. Set the potatoes aside. If you plan to include hard-boiled eggs as an optional addition, boil them at this stage (about 9-12 minutes), then peel, chop, and set aside.
- 2. In a skillet over medium heat, heat the Champion Oil. Add the diced onions and chopped celery, and sauté for 5-7 minutes until softened and translucent. Stir occasionally to ensure even cooking.
- 3. Sprinkle the wheat flour (or maida) evenly over the sautéed vegetables. Stir continuously for 2-3 minutes to cook out the raw flour taste and form a light roux. Gradually add the white cooking vinegar and about 1/4 cup of water, stirring constantly to create a smooth sauce.
- 4. Add the sugar, table salt, and white pepper to the sauce, adjusting the quantities to taste. Simmer the mixture for another 2-3 minutes, stirring occasionally, until it thickens slightly and the flavors are well combined.
- 5. In a large mixing bowl, combine the warm potato slices with the prepared sauce. Toss gently to coat the potatoes evenly with the sauce. If desired, fold in the chopped hard-boiled eggs at this stage.
