Ingredients

  • 250g Swad White Aval 250g
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 250 g Carrot
  • - Frozen Peas
  • 500 g Capsicum Green
  • 100 G Kadhai Masala
  • 100G Oleo
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 50G Green Chilies
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the flattened rice (poha) in a colander under running water for 30 seconds, ensuring it softens but does not become mushy. Set aside to drain.
  2. 2. Heat 2 tablespoons of vegetable oil in a kadhai or large pan over medium heat. Add mustard seeds and let them crackle, then add curry leaves and sauté for 30 seconds.
  3. 3. Add the chopped onion and green chilies to the pan. Sauté until the onions turn translucent, about 2-3 minutes.
  4. 4. Stir in the diced carrot, green peas, and green bell pepper. Cook for 3-4 minutes until the vegetables are slightly tender.
  5. 5. Add the turmeric powder, kadhai masala, and chopped tomato. Cook for another 2-3 minutes, allowing the spices to coat the vegetables and the tomatoes to soften.
  6. 6. Gently fold the rinsed poha into the vegetable mixture. Add salt to taste and mix well, ensuring the spices and vegetables are evenly distributed.
  7. 7. Cover and let the poha steam on low heat for 2-3 minutes. Turn off the heat and sprinkle lemon juice over the poha.
