- 200 g Paneer
- 500 g Tomato - Hybrid
- 500 g Onion
- 250 g Carrot
- 200G Adrak Lasun Paste (200g)
- 250 ml Olive Oil
- - Dairy Milk
- 500 g Capsicum Green
- 100 g Coriander Leaves
- 50g Everest Garam Masala
- - Green Peas
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 20 g Turmeric Powder
Instructions
- 1. Heat 1 tablespoon of oil in a kadhai or deep skillet over medium heat. Add cumin seeds and let them splutter, followed by the finely chopped onions. Sauté until golden brown.
- 2. Add ginger-garlic paste and cook for 1-2 minutes until fragrant. Stir in the tomatoes, turmeric powder, red chili powder, and salt. Cook until the tomatoes break down into a thick masala base.
- 3. Add the paneer cubes and diced bell pepper to the kadhai. Stir gently to coat the paneer with the masala. Let it cook for 5-7 minutes, then add garam masala and a splash of milk or cream. Mix well and simmer for 2-3 minutes. Remove from heat and garnish with fresh coriander leaves.
- 4. In a separate pan, heat the remaining tablespoon of oil over medium heat. Add the finely chopped carrots and sauté for 2-3 minutes. Add green peas and cook for another 3 minutes.
- 5. Add salt and a pinch of turmeric to the vegetables. Mash them slightly with a spatula to create a scrambled texture. Stir in some chopped coriander leaves for freshness.
- 6. Serve the kadhai paneer hot alongside the vegetable bhurji. Pair with parathas, toast, or enjoy on its own.
