Ingredients
- 100 g Curry Leaves
- - Grated Coconut
- 500 g Curd
- - Raw Banana (Plantains)
- 200 g Table Salt
- 100 g Red Mustard Seeds
- 100 g Jeera
- 20 g Turmeric Powder
- - Red Chilli Powder
Instructions
- 1. Peel 1 cup of raw plantain and 1 cup of elephant foot yam (suran). Cut them into small cubes. Rinse thoroughly.
- 2. In a pot, add the cubed plantain and yam along with 1/2 tsp turmeric powder, 1/2 tsp red chili powder, 1/2 tsp salt, and 1 1/2 cups of water. Cook on medium heat until the vegetables are tender but not mushy. Drain excess water if necessary.
- 3. Meanwhile, grind 1/2 cup of grated coconut, 2-3 green chilies, 1/2 tsp cumin seeds, and 1/4 cup of yogurt into a smooth paste. Add a little water if needed.
- 4. Add the ground coconut-yogurt mixture to the cooked vegetables. Mix well and simmer on low heat for 5-7 minutes, stirring occasionally.
- 5. In a small bowl, whisk 1/2 cup of thick yogurt until smooth. Add this to the simmering curry, stirring continuously to prevent curdling. Cook for another 2 minutes and turn off the heat.
- 6. Heat 1 tbsp of coconut oil in a small pan. Add 1/2 tsp mustard seeds and let them splutter. Add 2 dried red chilies and 10-12 curry leaves. Sauté for a few seconds and pour this tempering over the curry.
- 7. Mix gently and serve hot with steamed rice.
