Ingredients
- 500 g Onion
- 6 pcs White Eggs
- 100 g Pasteurised Butter
- - Toned Milk
- 200 g Table Salt
- 500G Maida (Refined Flour)
- - Nutmeg
Instructions
- 1. Begin by preparing the caramelized onions. Heat a skillet over medium-high heat and melt 2 tablespoons of pasteurized butter. Add the sliced onions and stir to coat them evenly. Cook for about 10 minutes, stirring every 3 minutes.
- 2. Sprinkle a pinch of table salt over the onions, and optionally add a teaspoon of brown sugar to enhance their sweetness. Reduce the heat to medium-low and continue cooking for 30-40 minutes, stirring occasionally, until the onions are golden brown and slightly crispy. Once done, set the caramelized onions aside.
- 3. While the onions are caramelizing, prepare the spaetzle batter. In a large mixing bowl, beat 4 white eggs thoroughly. Add 1 cup of toned milk and mix well. Gradually add 2 cups of all-purpose flour (not listed but assumed as part of the batter), a pinch of table salt, and 1 tablespoon of champion oil. Stir until the batter is thick and smooth.
- 4. Bring a large pot of water to a boil, filling it about 3/4 full. Add a pinch of table salt and 1 tablespoon of pasteurized butter or champion oil to prevent the spaetzle from sticking. Place a spaetzle hobel or colander over the pot and scrape about 1/4 of the batter onto it. Spread the batter across the hobel or colander with a spatula so it falls through in small bits.
- 5. When the spaetzle pieces rise to the surface of the boiling water, scoop them out with a slotted spoon and transfer them to a bowl or casserole dish. Repeat this process until all the batter is used.
- 6. Preheat your oven to 350°F (175°C). Assemble the Käsespätzle by layering the cooked spaetzle in a casserole dish with the cheeses. Use a combination of pizza cheese diced, cheddar cheese, Amul Gouda cheese, Kodai Gruyere cheese, Tillamook Colby Jack, and Appenzeller cheese. Create 2-4 layers, ensuring the top layer is a generous amount of cheese.
- 7. Bake the casserole in the preheated oven for about 15 minutes, or until the cheese is melted and the top is slightly golden. For a crispier top, bake for an additional 3-5 minutes.
- 8. Once baked, remove the casserole from the oven and let it cool slightly. Top the baked Käsespätzle with the caramelized onions prepared earlier.
- 9. Serve the Käsespätzle hot and enjoy your cheesy, savory dish!
