- 50g Everest Garam Masala
- 200 g Table Salt
- 20 g Turmeric Powder
- - Red Chilli Powder
- 50 g Asafoetida Powder
- 500G Maida (Refined Flour)
Instructions
- 1. Wash and pat dry 4 large green chilies (preferably Bhavnagari chilies). Slit them lengthwise and remove the seeds carefully.
- 2. In a mixing bowl, combine 1 cup of boiled and mashed potatoes, 1/4 tsp turmeric powder, 1/2 tsp red chili powder, 1/2 tsp coriander powder, 1/4 tsp garam masala, and salt to taste. Mix well to prepare the stuffing.
- 3. Fill each chili with the prepared potato stuffing, ensuring it is packed tightly.
- 4. In another bowl, prepare the batter by mixing 1 cup of gram flour (besan), 1/4 tsp turmeric powder, 1/2 tsp red chili powder, a pinch of asafoetida (hing), and salt to taste. Gradually add water to form a thick, lump-free batter.
- 5. Heat oil in a deep frying pan over medium heat. Dip the stuffed chilies into the gram flour batter, ensuring they are evenly coated.
- 6. Carefully lower the coated chilies into the hot oil and fry until golden brown and crisp. Remove and place them on a paper towel to drain excess oil.
- 7. Serve the mirchi vadas hot with tamarind chutney or green chutney.
