A wholesome and flavorful Jain-friendly mixed vegetable curry made with coconut, yogurt, and aromatic spices. Perfect for a satisfying dinner served over rice.
Ingredients
- 1 pack (500 g) Yummiez Mixed Vegetables
- 200 g Wow! Coco Fresh Grated Coconut
- 100 g Premium Green Chilli
- 1 pack (100 g) On1Y Whole Cumin Seeds, Sabut Jeera Spices
- 100 g X 3 Mtr Turmeric Powder | Arisina Pudi Combo
- 100 g Catch Sprinklers - Iodized Table Salt
- 850 g Oleev Smart Vitafit Edibale Vegetable Oil
- 200 g Whole Farm Premium Black Small Mustard Seeds
Instructions
- 1. In a small amount of water, cook 4-5 cups of mixed vegetables (such as green beans, carrots, and peas) until they are almost tender.
- 2. Grind together 2 tablespoons of grated coconut, 1 green chili pepper, 1 teaspoon of cumin seeds using a small amount of water to form a smooth paste.
- 3. In a bowl, mix the prepared coconut paste with 1/2 teaspoon of turmeric and 1 teaspoon of salt until well combined.
- 4. Reduce the heat under the cooked vegetables to low and gently stir in the coconut mixture. Cook for 3-4 minutes, ensuring the mixture does not curdle. If it does, the dish is still edible but may not look as appealing.
- 5. Heat 2 tablespoons of vegetable oil in a small pan. Add 1/4 teaspoon of mustard seeds and cook until they start to pop.
- 6. Pour the tempered mustard seeds and oil over the vegetable curry. Stir gently to combine.
- 7. Serve the curry hot over steamed rice for a delicious and satisfying dinner.
