Ingredients

  • 1 Kg Idly/Dosa Batter
  • 200 ml Mustard Oil
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 100 g Curry Leaves
  • 300 g Ginger Paste
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Heat oil in a pan over medium heat, and add mustard seeds, cumin seeds, and curry leaves. Let them splutter for a few seconds.
  2. 2. Add finely chopped onion and sauté until translucent. Stir in the ginger paste and cook for 1-2 minutes.
  3. 3. Add the mixed vegetables and cook for 3-4 minutes, then add turmeric powder, red chili powder, garam masala, and salt. Mix well and cook until the vegetables are tender.
  4. 4. Add chopped tomatoes and cook until they soften and blend into the mixture. Stir in the chopped coriander leaves and set the filling aside.
  5. 5. Heat a dosa pan or skillet over medium heat. Pour a ladleful of dosa batter onto the center and spread it outward in a circular motion to form a thin crepe.
  6. 6. Drizzle a few drops of oil around the edges and cook until the bottom is golden brown and crisp.
  7. 7. Place a portion of the prepared vegetable filling in the center of the dosa, fold it over, and serve hot with coconut chutney or sambar.
