Ingredients

  • 200 g Paneer
  • 1 kg Basmati Rice
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 200 ml Ghee
  • 200G Adrak Lasun Paste (200g)
  • 0.25 g Saffron
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 100 g Red Chili Powder
  • 100 g Salt
  • 100 g Tej Patta
  • 20 g Turmeric Powder

Instructions

  1. 1. Rinse the basmati rice and soak it in water for 30 minutes. Drain and cook until 80% done, then set aside.
  2. 2. Heat 1 tbsp ghee in a pan, add cumin seeds and bay leaf, and sauté for 30 seconds. Add sliced onions and cook until golden brown.
  3. 3. Add ginger-garlic paste and sauté for another minute. Stir in chopped tomatoes, turmeric, red chili powder, and salt. Cook until tomatoes are soft and the mixture thickens.
  4. 4. Add mixed vegetables, cook for 5 minutes, then stir in paneer cubes, yogurt, and garam masala. Mix well and cook for another 5 minutes.
  5. 5. Dissolve saffron strands in 2 tbsp warm milk. Layer the cooked rice over the vegetable and paneer mixture in the pan, drizzle saffron milk and remaining ghee on top.
  6. 6. Cover the pan tightly and cook on low heat for 15-20 minutes, allowing the dum to infuse flavors.
  7. 7. Garnish with chopped coriander leaves and serve hot with raita or pickle.
