Ingredients
- 200 g Paneer
- 1 kg Basmati Rice
- 500 g Onion
- 500 g Tomato - Hybrid
- 200 g Dahi
- 200 ml Ghee
- 200G Adrak Lasun Paste (200g)
- 0.25 g Saffron
- 100 g Coriander Leaves
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 100 g Tej Patta
- 20 g Turmeric Powder
Instructions
- 1. Rinse the basmati rice and soak it in water for 30 minutes. Drain and cook until 80% done, then set aside.
- 2. Heat 1 tbsp ghee in a pan, add cumin seeds and bay leaf, and sauté for 30 seconds. Add sliced onions and cook until golden brown.
- 3. Add ginger-garlic paste and sauté for another minute. Stir in chopped tomatoes, turmeric, red chili powder, and salt. Cook until tomatoes are soft and the mixture thickens.
- 4. Add mixed vegetables, cook for 5 minutes, then stir in paneer cubes, yogurt, and garam masala. Mix well and cook for another 5 minutes.
- 5. Dissolve saffron strands in 2 tbsp warm milk. Layer the cooked rice over the vegetable and paneer mixture in the pan, drizzle saffron milk and remaining ghee on top.
- 6. Cover the pan tightly and cook on low heat for 15-20 minutes, allowing the dum to infuse flavors.
- 7. Garnish with chopped coriander leaves and serve hot with raita or pickle.
