Ingredients
- 500G Poha (Flattened Rice)
- 500 g Onion
- 250 g Carrot
- - Green Peas
- 200 g Dahi
- 200 ml Mustard Oil
- 500 g Capsicum Green
- medium Chilli Green Long
- 100 g Coriander Leaves
- 50g Everest Garam Masala
- 100 g Jeera
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the thick poha in a colander under running water until it softens slightly but does not become mushy. Set aside to drain.
- 2. Heat oil in a deep pan over medium heat. Add mustard seeds and cumin seeds, allowing them to splutter.
- 3. Add the chopped onions and sauté until golden brown. Stir in the green chilies, followed by the tomatoes, and cook until the tomatoes soften.
- 4. Add the grated carrot, diced bell pepper, and green peas. Cook for 3-4 minutes until the vegetables are partially tender.
- 5. Mix in the turmeric powder, red chili powder, garam masala, and salt. Stir well to coat the vegetables with the spices.
- 6. Gently fold in the prepared poha, ensuring it is evenly coated with the spice mixture. Add the yogurt and mix lightly to maintain the texture of the poha.
- 7. Cover the pan with a tight-fitting lid and lower the heat to the minimum. Allow the poha to cook on dum for 5-7 minutes to let the flavors meld.
- 8. Turn off the heat, garnish with chopped coriander leaves, and give it a final mix. Serve hot.
