- 100 g Curry Leaves
- 200 ml Mustard Oil
- 100 g Coriander Leaves
- 50 g Cumin Powder
- 50g Everest Garam Masala
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Heat 1 tablespoon of oil in a pan over medium heat. Add the idli quarters and pan-fry them until golden and crisp on all sides. Remove and set aside.
- 2. In the same pan, heat the remaining 1 tablespoon of oil. Add mustard seeds and allow them to splutter, then toss in the curry leaves and green chili, sautéing for 30 seconds.
- 3. Add the chopped onion and sauté until golden brown. Stir in the ginger-garlic paste and cook until the raw smell disappears.
- 4. Mix in the chopped tomatoes, turmeric powder, red chili powder, cumin powder, and salt. Cook until the tomatoes are soft and the oil begins to separate.
- 5. Add the paneer cubes to the pan and gently toss to coat them in the masala. Cook for 2-3 minutes, ensuring the paneer absorbs the flavors.
- 6. Sprinkle garam masala over the mixture and give it a quick stir. Add the pan-fried idlis and toss everything together gently, ensuring the idlis are well-coated with the spices.
- 7. Garnish with fresh coriander leaves and serve hot. Enjoy your Hyderabadi Spicy Paneer Idli Fry as a standalone dish or with a side of chutney.
