- 500G Poha (Flattened Rice)
- 200 ml Mustard Oil
- 500 g Capsicum Green
- 100 g Coriander Leaves
- 100 g Curry Leaves
- 500g Good Life Raw Peanuts 500 G
- 50G Green Chilies
- - Green Peas
- 250 ml Lemon Juice Concentrate
- 100 g Red Chili Powder
- 100 g Salt
- 500 g Tomato - Hybrid
- 20 g Turmeric Powder
- 100 g Yellow Mustard Seeds
Instructions
- 1. Rinse the poha in cold water for about a minute, drain completely, and set aside to soften.
- 2. Heat oil in a pan over medium heat. Add mustard seeds and let them crackle, then add curry leaves and chopped green chilies, stirring for 30 seconds.
- 3. Add the turmeric powder, followed by the chopped tomato, and cook until the tomato softens, about 2-3 minutes.
- 4. Stir in the green peas and capsicum. Cook for 3-4 minutes until the vegetables are tender but retain a slight crunch.
- 5. Add the softened poha, roasted peanuts, red chili powder, and salt. Mix gently to combine and heat through, about 2 minutes.
- 6. Turn off the heat and mix in the lemon juice and fresh coriander leaves.
- 7. Serve hot with additional lemon wedges on the side, if desired.
