Ingredients

  • 500G Poha (Flattened Rice)
  • 200 ml Mustard Oil
  • 500 g Capsicum Green
  • 100 g Coriander Leaves
  • 100 g Curry Leaves
  • 500g Good Life Raw Peanuts 500 G
  • 50G Green Chilies
  • - Green Peas
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 500 g Tomato - Hybrid
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the poha in cold water for about a minute, drain completely, and set aside to soften.
  2. 2. Heat oil in a pan over medium heat. Add mustard seeds and let them crackle, then add curry leaves and chopped green chilies, stirring for 30 seconds.
  3. 3. Add the turmeric powder, followed by the chopped tomato, and cook until the tomato softens, about 2-3 minutes.
  4. 4. Stir in the green peas and capsicum. Cook for 3-4 minutes until the vegetables are tender but retain a slight crunch.
  5. 5. Add the softened poha, roasted peanuts, red chili powder, and salt. Mix gently to combine and heat through, about 2 minutes.
  6. 6. Turn off the heat and mix in the lemon juice and fresh coriander leaves.
  7. 7. Serve hot with additional lemon wedges on the side, if desired.
