Ingredients

  • 1 kg Basmati Rice
  • 400G Chtoura Foods Boiled Chickpeas In Brine
  • 500 g Onion
  • 500 g Tomato - Hybrid
  • 200 g Dahi
  • 200G Adrak Lasun Paste (200g)
  • 200 ml Ghee
  • medium Chilli Green Long
  • 100 g Coriander Leaves
  • 50g Everest Garam Masala
  • 100 g Jeera
  • 1Bunch Pudina
  • 100 g Salt
  • 250 g Spinach
  • 20 g Turmeric Powder

Instructions

  1. 1. Wash the basmati rice thoroughly and soak it in water for 20 minutes, then drain and set aside.
  2. 2. Heat 2 tablespoons of ghee in a large, heavy-bottomed pot and add the cumin seeds. Allow them to splutter.
  3. 3. Add the sliced onion and sauté until golden brown. Then, mix in the ginger-garlic paste and cook for 1 minute until fragrant.
  4. 4. Stir in the chopped tomatoes, turmeric powder, and salt. Cook until the tomatoes turn soft and the mixture forms a masala base.
  5. 5. Add the boiled chickpeas, yogurt, garam masala, and slit green chilies. Mix well and cook for 2-3 minutes.
  6. 6. Gently fold in the fresh spinach, coriander, and mint leaves, cooking until the spinach wilts slightly.
  7. 7. Layer the soaked rice evenly over the mixture and pour in 1.5 cups of hot water. Do not stir.
  8. 8. Cover the pot with a tight-fitting lid or seal it with dough for the dum method. Cook on low heat for 20-25 minutes, allowing the rice to steam and absorb the flavors.
  9. 9. Turn off the heat and let the pulao rest for 5 minutes before gently fluffing the rice with a fork.
