Ingredients

  • 1 kg Basmati Rice
  • 500 g Onion
  • 500 g Capsicum Green
  • - Chicken Breast
  • 250 gm Green Garlic
  • 100 g Hot Sauce
  • 500 Ml Champion Oil

Instructions

  1. 1. Heat a large skillet over medium heat and add a generous drizzle of Champion Oil. Add 1 kg of thinly sliced red onion and sauté until the onions become translucent, about 5-7 minutes.
  2. 2. While the onions are cooking, cut 500g of chicken breast into small bite-sized pieces and season lightly with table salt.
  3. 3. Push the onions to the sides of the skillet and add the chicken to the center. Cook the chicken for 5-7 minutes, stirring occasionally, until it is fully cooked and tender.
  4. 4. Once the chicken is cooked, add 250g of finely chopped green garlic to the skillet. Stir everything together and sauté for 1-2 minutes, stirring frequently, until the garlic becomes fragrant. Be careful not to let the garlic burn.
  5. 5. Slice a green pepper into thin strips and add it to the skillet. Stir-fry the vegetables and chicken together for 3-4 minutes until the pepper begins to soften.
  6. 6. Add 200g of huitlacoche to the skillet. Stir well and let it warm through for 2-3 minutes, allowing its unique flavors to infuse the dish.
  7. 7. Season the stir-fry with a pinch of table salt and a splash of hot sauce, adjusting to taste. Stir everything together to ensure even seasoning.
  8. 8. Continue to stir-fry for an additional 2-3 minutes to allow all the flavors to meld together.
  9. 9. Serve the Huitlacoche and Chicken Stir-Fry hot with your choice of side, such as rice or tortillas.
