Ingredients

  • 500 g Rava
  • 200 ml Ghee
  • - Green Peas
  • 250 g Carrot
  • 1 kg Bell Peppers
  • 100 g Coriander Leaves
  • - Vegetable Stock Cubes
  • 50 g Black Pepper Powder
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 250 ml Lemon Juice Concentrate
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds
  • 250 g French Beans

Instructions

  1. 1. Heat ghee in a pan on medium heat, add mustard seeds, and let them splutter. Add curry leaves and chopped green chili, and sauté for 30 seconds.
  2. 2. Add the multigrain semolina to the pan and roast it for 3-4 minutes until lightly golden and aromatic. Remove it from the pan and set aside.
  3. 3. In the same pan, add diced carrots, chopped beans, bell peppers, and green peas. Sauté the vegetables for 3-4 minutes until slightly tender.
  4. 4. Add turmeric powder, salt, and black pepper powder to the vegetables and mix well.
  5. 5. Pour vegetable stock into the pan and bring it to a gentle boil.
  6. 6. Gradually add the roasted semolina to the boiling stock while stirring continuously to avoid lumps forming.
  7. 7. Reduce the heat to low and cook for 5-7 minutes, stirring occasionally, until the semolina absorbs the liquid and reaches a soft, fluffy consistency.
  8. 8. Stir in chopped coriander leaves and lemon juice for a fresh, tangy flavor. Mix well and cook for another minute.
  9. 9. Turn off the heat and let the upma rest for 2-3 minutes before serving warm.
