Ingredients

  • 500 g Poha
  • 200 ml Mustard Oil
  • 500 g Onion
  • 250 g Carrot
  • - Green Peas
  • 100 g Coriander Leaves
  • 500 g Capsicum Green
  • medium Chilli Green Long
  • 100 g Curry Leaves
  • 500g Good Life Raw Peanuts 500 G
  • 250 ml Lemon Juice Concentrate
  • 100 g Red Chili Powder
  • 100 g Salt
  • 20 g Turmeric Powder
  • 100 g Yellow Mustard Seeds

Instructions

  1. 1. Rinse the poha gently under cold water in a colander and let it drain completely for 5 minutes.
  2. 2. Heat oil on a tawa or flat griddle over medium heat and add mustard seeds. Once they splutter, add curry leaves and green chili, sautéing for 30 seconds.
  3. 3. Add the chopped onion and sauté until soft and translucent, about 2-3 minutes.
  4. 4. Stir in the carrot, peas, and capsicum, and cook for 3-4 minutes until the vegetables are tender but still slightly crunchy.
  5. 5. Add turmeric powder, salt, and red chili powder, mixing well to coat the vegetables evenly.
  6. 6. Gently fold in the rinsed poha, ensuring it mixes evenly with the vegetables and spices. Cook for 2-3 minutes until the poha is heated through.
  7. 7. Add roasted peanuts and mix well. Remove the tawa from heat.
  8. 8. Squeeze lemon juice over the poha and garnish with chopped coriander leaves before serving warm.
