Ingredients
- 100 g Sambar Onion Peeled
- 100 g Garlic - Single Clove
- 400 g Pastazara Peeled Tomatoes In Tomato Juice
- 35 g On1Y Grinder Italian Seasoning Flakes
- 141 g Pam Grilling Grillades Cooking Spray
- 250 g Organically Grown Green Capsicum
- 200 g Cherry Tomatoes
- 70 g Namakwali Authentic Mix Seasoning Flavoured Salt
- 1 pc (50 g) Everest Tasteeto Black Pepper | Grinder Cap Bottle
Instructions
- 1. Finely chop 1/2 cup of onion, 1/2 cup of green capsicum, and mince 1 teaspoon of garlic.
- 2. Halve 1 cup of cherry tomatoes and set them aside.
- 3. Lightly spray the bottom of a 5-quart stewpot with cooking spray. Add the chopped onion, green capsicum, and garlic, and sauté over medium heat until the green capsicum is tender, about 5 minutes.
- 4. Add 4 cups of water to the pot and stir well. If you prefer a thicker soup, reduce the amount of water slightly.
- 5. Add the halved cherry tomatoes, 2 cups of diced tomatoes, and 4 tablespoons of Italian seasoning to the pot. Stir to combine and bring the mixture to a gentle boil. Cook for about 5 minutes.
- 6. Reduce the heat to low and let the soup simmer for 15-20 minutes.
- 7. Taste the soup and season with salt and pepper as needed. Add additional Italian seasoning if desired.
- 8. Serve the soup hot with optional toppings such as shredded Italian cheeses, grated Parmesan cheese, chopped spring onions, or seasoned bread crumbs on the side.
