Instructions

  1. 1. Begin by preparing the paneer filling. Heat 1 tablespoon of cooking oil in a kadhai or deep pan over medium heat. Add the ginger paste and garlic paste, sauté for 1 minute until fragrant.
  2. 2. Add the chopped onion, tomato, green bell pepper, and green chili. Cook for 5-7 minutes, stirring frequently, until the vegetables soften.
  3. 3. Add the cumin powder, coriander powder, turmeric powder, red chili powder, and garam masala. Mix well and cook for another 2 minutes.
  4. 4. Crumble the paneer into the pan, stir to combine, and cook for 3-4 minutes. Adjust salt to taste. Remove the filling from heat and set aside.
  5. 5. In a mixing bowl, combine besan, yogurt, turmeric, red chili powder, and salt. Gradually add water while whisking to form a smooth batter of medium consistency.
  6. 6. Heat a non-stick pan over medium heat and lightly grease it with oil. Pour a ladleful of the besan batter onto the pan and spread it into a thin circular chilla.
  7. 7. Cook the chilla for 2-3 minutes until bubbles appear on the surface. Flip and cook the other side for 2 minutes until golden brown.
